Here is a delicious pumpkin recipe!! I find pumpkin to be the most perfect comfort food– it’s filling, nutritious, sweet & savoury, and can make any meal complete!
Roasted Pumpkin with Garlic & Basil (serves 2)
4 Cups of fresh Pumpkin (cut in cubes)
1/4 Cup fresh Basil (finely chopped)
7 – 8 cloves of Garlic (peeled)
1 Tbsp Olive Oil (can substitute with Ghee or Coconut Oil)
1/2 tsp Sea Salt
1- Preheat oven 175℃ / 350℉
2- Combine chopped basil, salt and oil in a small bowl and mix well.
3- Combine all ingredients in a large mixing bowl making sure the pumpkin and cloves of garlic are thoroughly coated with basil/oil mixture.
4- Spread on a baking sheet or pan, and place in the oven, uncovered, for 40-45 minutes (until cooked).
5- Serve and enjoy!!!
